History Of Food: The Root Cellar

The Root Cellar


Root  Cellars are an ancient form of long-term food storage of foods and veggies and fermented beverages.

Early records show Root Cellars in use 40,000 years ago.
Native Australians were among the first to take advantage of the insulated properties of burying food.
Walk in food storage cellars were invented in the 17th century in England. This was the first appearance of the root cellar as we know it.

According to Hobby Farm, “the most notable practitioners of root-cellar arts were the early colonists that arrived in North America from the United Kingdom. The eastern halves of America and Canada contain thousands of old root cellars, and the small Newfoundland town of Elliston actually claims the title of “Root Cellar Capital of the World,” and boasts of over 135 root cellars, some dating back 200 years.”

How Does it Work:

Root Cellars were essentially the first refrigerators. The under ground storage provided a dark cool environment to store produce and slow or prevent spoilage. A good root cellar can often be 40F cooler than the outside temperature.

You can store just about anything in your root cellar! Some preparations and precautions are needed for some items and to prevent some produce from causing a bitter taste to others. One cellar may be used for items needing a high humidity, and a lower humidity cellar for other goods requiring a lower humidity such as canned foods, and grains.

According to Wikipedia, “Vegetables stored in the root cellar primarily consist of potatoes, turnips, and carrots. Other food supplies placed in the root cellar over the winter months include beets, onions, preserves/jams, salt meat, salt turbot, salt herring, Winter squash, and cabbage.Separate cellars are occasionally used for storing fruits, such as apples. Water, bread, butter, milk, and cream are sometimes stored in the root cellar also. In addition, items such as salad greens, fresh meat, and jam pies are kept in the root cellar early in the day to keep cool until they are needed for supper.”

Our Daily Starch?!?!

 Bread. For many generations, bread has been an essential to life for man kind. It was *the* stable of every culture. Bread was healthy. Bread was life sustaining. But now, it seems, bread just makes you fat.


Most likely you can peek at the label of one of your favorite treats and you will see 'enriched wheat flour' as a main ingredient. But what IS enriched wheat flour?

Enriched wheat flour is flour that has been bleached and striped of all nutrients until it forms a nutrition-less starch. Enriching is necessary because the processing used to make white flour destroys most of the nutrients that originally were present in the whole grain

Interestingly, One of the key nutrients added back to white flour is iron, however it is not iron in a usable form, but yet a metallic form our bodies cant process.

White flour is essentially nothing more than a starch, and the body processes it does other starches and sugars. White flour is really nothing more than a refined carbohydrate. It is a great contrast to its Whole Wheat counterpart which is processed by the body in a completely different way. 

Whole Wheat flour is absorbed by the body as a grain. It is used for energy and processed slowly by your body.

Enriched Flour is basically a healthy grain striped down to a starch and 'enriched' with some of the vitamins and minerals removed in the processing. 
 This enriching and bleaching process is esentially why bread is now 'bad'. This bleaching process took a nutrutuous food which sustained life of all kinds and turned it into a literal killer. This 'Daily Starch' sends out bodies through a roller coaster of sugar highs and lows and leads to diabeties, obesidy, heart disease and a whole host of other health problems.

Our daily bread had been turned into our daily starch!!

Recipe: Homemade 'Helper' Recipe

We love easy around here. And we have all been brain washed into believing those boxed ‘helper’ recipes are as easy as it gets.
With a whopping 110 Calories in the mix alone and a lengthy list of unhealthy ingredients and preservative, there must be a better way!
Making homemade hamburger helper could not be easier!! You make up a basic ‘mix’ and add noodles and meat as you see fit. You could easily layer noodles, mix and spice into mason jars to give as gifts or as a quick meal. With options such as freeze dried meats or TVP, quick ‘helper’ style meals have never been easier!!
Homemade ‘Helper’ Mix
  • 1 1/4 tsp. black pepper
  • 1 Tbs. garlic powder
  • 2 Tbs. dried parsley
  • 1/3 cup Thrive Freeze Dried Onion
  • 1 Tbs. salt
  • 1 2/3 cup Thrive Powdered milk
  • 3 1/2 Tbs. Thrive beef bouillon
Mix this all up and store in a glass jar or other sealed container.
Use 1/2 cup for each pound of ground meat.
The Nutrition Info for this basic mix comes to about the following: 41 Calories, less than 1g of fat
Basic Preparation:
  • 1 pound meat (Thrive Freeze Dried Beef, Thrive Beef TVP, or seasoned browned ground beef)
  • 1/2 cup of  ‘helper’ mix (above)
  • 1 to 2 cups noodles (elbow macaroni for example)
  • 1 1/2 to 3 cups water
Stir in meat, dry mix, then add 2 cups hot water and 2 cups noodles. You can add more or less water and noodles, proportionately, depending on much you need to stretch that pound of beef. Bring to a boil, then turn down to a simmer, cover, and cook until noodles are tender, about 20 minutes.
This Recipe is easily adaptable to what you have on hand and what you are hungry for. Looking for a cheese burger? Add Thrive Cheese Blend or Shredded Cheddar Cheese. Throw in some Bacon TVP for a bacon Cheese burger! With Thrive Freeze Dried vegetables, its easy to add corn, green beans, or other yummy veggies to your helper meal. Just dd them when you add the noodles. Looking for a comfort food: Instead of macaroni, add 2-3 cups very thinly sliced potatoes. Simmer 20-30 minutes until potatoes are tender. Uncover and simmer until liquid has evaporated.
This recipe is easily adapted to your families dietary needs. Use whole grain pasta. Or gluten Free Pasta. Season and adjust the recipe to your needs and taste.
When you do the math this recipe is an incredible money saver!! You could easily take the $2 or so it takes to buy one preboxed ‘helper’ meal and buy enough pasta to make this recipe 2-3 times! LDS Drastically Raises Prices

Price increases on April 4th at the LDS canneries show inflation up between 11 and 49% for many basic food staples.  These rise in prices are a strong barometer for the overall economy since the LDS facilities are usually the last to raise prices for their communities, which provides food in bulk that they can collect through their vast networking operations.
According to the new price list from April 4th, many food staples have increased by more than 20% since the last price list came out just 3 months ago on January 3rd.

Shelf Reliance featured CNN & One More Reason I Prepare

With the recent poor economy and natural disasters more and more people are discovering that they feel the need to get prepared.  Shelf Reliance was recently included in a report on CNN about the increase of sales of food storage and fallout shelters.  There is a link to the video below.

So what's all the buzz about "being prepared"?  Preppers, as we are often referred as, do not believe that by preparing and storing food we are going to weather the end of the world!  We are not waiting for some natural disaster or cataclysmic event to happen.  We simply feel the internal need to be prepared.  Prepared for what?  Anything!  There are some events in life that you can prepare for and some you can't!

In 2001 I was working as the Manager at a electronic data storage company.  Our boys were then 5 and 2 and my husband was working as a public CPA.  We were active an active family, playing church league softball and volleyball.  A fellow athlete had been having some back trouble and after multiple trips to the chiropractor gave him no relief he went to his medical doctor.  They found out that he was eaten up with bone cancer and he died two weeks later.  He was the picture of perfect health!  We were shocked.  I went to my doctor and had a complete physical exam.  I wasn't letting anything like that sneaking up on me!  I was in great health!

Nine months later during a coughing fit caused by my allergies, I broke an artery in my neck!  Three days later I was a very, very sick woman.  I had suffered at stroke as a result of the broken artery.  Dissection of the Right Vertebral Artery was the medical term for it.  I was 31 years old.  I spend 2 weeks in the hospital.  As a result of the stroke, I had to use a cane for a while, couldn't hardly use my right hand, had to learn to write again, couldn't talk correctly and had some short term memory loss.  I have recovered about 95%.  I have to stay on medicine due to the brain damage from the stroke and my right arm is still weak at times.  It could have been so much worse!

Could I have prepared for that?  Not physically or mentally.  However, financially it would have been a much easier blow if we would of had some food storage back then.  We lost $1200 a month in income.  So what did we do?  Exactly what so many Americans do, we fell back on our credit cards.  All our grocery and household items went on our cards which skyrocketed our debt!  Imagine how much it would have saved us if we would of had a years worth of food storage on hand!

Preppers just want to do everything in their power to be ready to handle whatever life throws at them.  It could be sickness, job loss, death of a loved one, storms, natural disasters or just that someone had a wreck and knocked out a power pole and my house will be without electricity for 48 hours.  You never know! 

Why do you have insurance, beside the fact that some of it is required?  Why do you have a will?  JUST IN CASE!  We have life insurance, health insurance, dental and vision plans and even cancer insurance that are not required.  We had AFLAC, which is accident insurance, when I was sick and got $3,000, which greatly helped.  Cancer policies?  Do you know what your chances of getting cancer are compared to chance of you or your spouse loosing your job?  Think for a moment what would happen to your finances if just one of your incomes were lost.  After thinking about that, why wouldn't you want to prepare the best you can?

Wal-Mart CEO Bill Simon expects inflation

In an interview with USA Today, Wal-Mart CEO Bill Simon talks about the coming inflation. 

"U.S. consumers face "serious" inflation in the months ahead for clothing, food and other products, the head of Wal-Mart's U.S. operations warned Wednesday. The world's largest retailer is working with suppliers to minimize the effect of cost increases and believes its low-cost business model will position it better than its competitors.  Still, inflation is "going to be serious," Wal-Mart U.S. CEO Bill Simon said during a meeting with USA TODAY's editorial board. "We're seeing cost increases starting to come through at a pretty rapid rate."

"Along with steep increases in raw material costs, John Long, a retail strategist at Kurt Salmon, says labor costs in China and fuel costs for transportation are weighing heavily on retailers. He predicts prices will start increasing at all retailers in June.
"Every single retailer has and is paying more for the items they sell, and retailers will be passing some of these costs along," Long says. "Except for fuel costs, U.S. consumers haven't seen much in the way of inflation for almost a decade, so a broad-based increase in prices will be unprecedented in recent memory."

"Consumer prices — or the consumer price index — rose 0.5% in February, the most since mid-2009, largely because of surging food and gasoline prices. Core inflation, which excludes volatile food and energy costs, rose a more modest 0.2%, though that still exceeded estimates."

Many economic forecasters are predicting hyperinflation.  What is hyperinflation?  Wikipedia says, "In economics, hyperinflation is inflation that is very high or "out of control"".

So, what can you, the customer do to stop it?  Nothing really.  What you do have control over is how it affects you and your bank account.  You need to stock up on items that you use everyday NOW!  The sites that I follow say that hyperinflation could start as soon as May!  Do you use coupons?  Well you need to start now!  Capitalize on store sales and match them with coupons to get the lowest price possible and stock up!!  Now going out and filling your pantry can be expensive so let me be clear that I am not recommending that you go into debt to do this.  Don't use your credit card!  That totally defeats the purpose!  The interest will negate any savings!

Food Storage Shelf Life


So you’ve followed the emergency preparedness guidance of the experts by stocking up on food storage for yourself and your family. No matter what the future brings, your outlook is bright because you know you’re ready for even the direst times. But how long will your preparation efforts last? Do they have an expiration date? There are varying points of view on this topic, but the short answer is your food storage will have a “sustain life” shelf life of at least 20 years.

There are many conflicting opinions on this issue. The main problem with the lack of expiration date consistency is there are different levels of food expiration.  When your food is used within the “best if used by” range, you will experience its full taste and nutritional value. When your food is stored longer, chemical changes can occur. Over time, minerals and carbohydrates in food do not transform much. Proteins and fats, however, can deteriorate in quality and cause off-tasting food. Vitamins are also susceptible to heat, light, and oxygen destruction.

Calorie intake is the most important life sustaining factor. Because calories do not mutate or fade drastically over time, the life of food storage products has more than one level.

If you want your food storage to have the best taste and highest nutrients, it is recommended that most items be used within 2-5 years. However, if you plan to use your food storage to sustain life, many items can last up to 20+ years. Once opened, most foods should be used within 6-18 months. However, many opened foods can remain life sustaining for up to 5 years if they are kept well covered and stored in a cool, dry area.
To maximize the taste, nutritional value, and shelf life of your food storage, follow these tips:

• Keep cans open for the least amount of time possible.

• To maximize freshness, keep oxygen absorbers in your opened cans. 

• Scoop food out of your cans instead of pouring, Doing this will limit oxygen intake.

• Reseal your opened cans with their plastic coverings.

• Store your food in a dark, dry, cool place (a basement or cold storage area is highly recommended).

• Limit your opened cans' contact with humidity.

Women's Day Magazine Promotes Direct Sales

I sat down last night to thumb through my new April issue of Woman's Day and was very happy at what I saw!  In it Mary Hunt's article "Have a Party, Make Money", promotes supplementing your income with a direct-selling business.  She discusses the low start up, the income possibility and the flexible scheduling.  Here is a link to the online version of the article.  She then listed some companies and told where so see more online.  I quickly logged on of course, to see if Shelf Reliance was on the list, and it wasn't.  Listed were several companies that I have heard of, but they all consisted of purses, jewelry, bras, candles and Pampered Chef.  All great companies!  But they all have one thing in common...they are selling discretionary items.  Don't get me wrong, I love bling bling and purses.  But in today's economy when money gets tight, those will be the first items to be cut from the budget!  Another drawback that I see is that they are often a one time purchase.  For example, I have about 4 baking stones that I bought about 7 years ago from Pampered Chef that I love and use every week.  However, they were very expensive and although I use them regularly I have not purchased from them in a long time.  They do not sell a consumable item so your chances of repeat customers goes down drastically.  Mary Kay and other makeup companies do have a much better percentage of repeat customers.  However, when things get tight most mom's have a hard time spending $20 or so on a bottle of makeup.  Don't get me wrong, I love their products and my sister used to sell it and was very successful at it about 10 yrs ago.  But times have changes and things are only going to get harder. The US is borrowing 4 million dollars a day from OTHER countries!  The dollar is only going to get weaker and food prices are going to continue to rise!

How To Use The Q

To Build Your Home Store


Considering using the Q to build your "home store"?

The Q is an invaluable tool when planning and setting up your "home store".  Shelf Reliance knows that you are busy!  You have more pressing things that need your attention than wondering if you have enough eggs to bake the cupcakes for your child's school party tomorrow.  A "home store" means conviencence for you!  Onions and celery are already chopped, hamburger meat is already browned and the brocolli is washed and fresh!
Setting up your Q is so easy!  Its just 3 simple steps!
Q Planner
#1.  Use the Q Planner!  Based on the information you provide, the Q Planner will automatically create a plan designed specifically for your family. You can determine the THRIVE foods your Q sends to replace your monthly groceries. You can also decide the amount of each food you want to have in your "store".  Edit your shipments to include an item that you are running low on at any time.

When you are thinking about what foods to add to your Q, keep in mind your families favorite meals. Do you use a lot of onions?  Having them in your store will save you prep time.  Do you like mushrooms but they always seem to go bad in the crisper?  Just one can in your "store" would save money and be convenient!  Keep a couple of cans of Freeze Dried Bananas for after school snacks!

 
Q Budget
#2.  Set a monthly budget amount.  Most of us don't have the extra money sitting around to invest in an instant "store".   The Q makes stocking your "store" easy and affordable.  You simply reallocate a portion of your current food budget to apply toward THRIVE foods.  That way you are investing in your own "home store" without increasing your monthly expenses!  The amount can be as little as $30 or as high as you wish.  You even choose the day of the month that you want it to process.  Remember, you are building your own "home store" that will save you time and money!  No more last minute trips to the store!  Who actually only gets the 1 or 2 items they went for?  Nope, we always come out with a couple of bags that includes impulse buys.  Not to mention the money you will save on gas!
